Strawberry Cheesecake Ice Cream

| Directions |
| 1 cup (240 mL) non-fat half & half |
| 1 cup (240 mL) reduced fat sour cream |
| 6 oz. low fat cream cheese |
| 2 tablespoons fresh lemon juice |
| 1/2 teaspoon vanilla extract |
| 3/4 cup sugar or other sweetener, to taste |
| 3 cups frozen strawberries |
| 1 cup (240 mL) ice cubes |

| Place all ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Use tamper to press ingredients into the blades while processing. In about 30 to 60 seconds, the sound of the motor will change and four mounds should form in the mixture. Stop machine. Do not overmix or melting will occur.

| Fill bottom ˝ of serving glass with strawberry cheesecake ice cream. Layer with whipped topping, then fresh blueberries. Serve immediately. |

Researchers feel there may be nothing better—or better-tasting--than blueberries for preventing memory loss and other age-related cognitive problems.
A recent study done on rats showed that supplementing the diet for 8 weeks with blueberry extract improved two major age-related concerns: loss of memory and loss of coordination.
Researchers fed healthy pre-middle-aged laboratory rats a steady diet of blueberries and found that they did much better than the non-berry-eating rats on mental acuity tests as they reached middle age and beyond. Another similar study showed that older rats given blueberry extract learned and remembered better and performed better on a balance beam.
