1 orange, peeled with a 2 inch piece of peel remaining
1/4 cup (60 mL) olive oil
1 cup sugar
1 large egg
1 1/2 teaspoons baking poweer
1/2 teaspoon baking soda
1 teaspoon salt
2 cups whole wheat flour
1 cup fresh cranberries
1/2 cup chopped walnuts (chop on VARIABLE, speed #4)
 
1. Lightly coat a 4 1/2 by 8 1/2 inch (11.25 x 21.25 cm) loaf pan with vegetable cooking spray or shortening. Preheat oven to 350 F (180 C).

2. Place orange, oil and sugar in the wet blade container. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 30 seconds; during the last 5 seconds drop the egg through the opening in the lid.

3. In a large bowl, combine baking powder, baking soda, salt and flour.

4. Add wet mixture to the dry ingredients in the bowl. Whisk by hand until moistened.

5. Gently stir in cranberries and chopped walnuts.

6. Spread the batter in the prepared loaf pan. Bake at 350 F (180 C) for about 1 hour or until a toothpick inserted into the center comes out clean. Makes 1 loaf.
