Tomato Onion Cheese Soup

| 1/4 cup onion |
| 1/4 cup sharp Cheddar or Swiss cheese |
| 1 tablespoon tomato paste |
| 1 cup (240 mL) low sodium chicken, vegetable, or beef stock |

| Place all ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 5 to 6 minutes or until steam escapes through lid. Serve immediately. |
