Golden Apple Curry and Cheddar Fondue

| 1 (140 g) golden delicious apple, diced |
| 1 (40 g) medium celery stalk with leaves, diced |
| 1 (110 g) medium onion, finely chopped |
| 1 clove garlic, minced |
| 2 tablespoons butter |
| 3 teaspoons curry powder |
| <*>For the Fondue<*> |
| 3/4 cup (180 mL) lager beer |
| 3/4 cup (180 mL) water |
| 2 teaspoons lemon juce |
| 1 teaspoon curry powder |
| 1 tablespoon (15 mL) cornstarch |
| 1 teaspoon freshly ground black pepper |
| 2 cups sharp Cheddar cheese, cubed |

| Heat butter in saute pan over medium heat. Add onion, celery and garlic. Saute for 3 minutes. Add apple and curry powder. Saute 2 minutes more. Set aside. |

| Place all ingredients, except the apple mixture, in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1 . Turn on machine and quickly increase speed to #10 ; then to HIGH . Run for 3 to 4 minutes until mixture is smooth and warm. Pour mixture into fondue pot. Stir in apple mixture. |

| For dippers: cubed country French bread, mushroom caps, steamed or grilled asparagus spears, steamed or grilled broccoli and cauliflower, seasonal bell peppers . |
