Balsamic Citrus Dressing
Speed: Variable
Time: 30 seconds
| 1/4 cup (60 mL) organic balsamic vinegar |
| 3 medium oranges, peeled |
| 3 green onions, white part only |
| 2 small cloves garlic, peeled |
| 2 tablespoons sugar or other sweetener of choice |
| 2 tablespoons (30 mL) lime juice or 1/2 peeled lime |
| 1/8 teaspoon white pepper |
| 1 teaspoon salt |
| 1/2 cup (120 mL) olive oil |
| |
1. Place all ingredients, except olive oil, into the Vita-Mix container in order listed and secure lid.
2. Select Variable 1.
3. Turn on machine and quickly increase speed to Variable 10, then to High.
4. Blend for 30 seconds or until smooth.
5. Reduce speed to Variable 4 and remove lid plug.
6. Pour oil in a thin stream through the lid plug opening until thoroughly emulsified.

| Note: Refrigerate in airtight container. Bring to room temperature and shake before serving over salad.
Use agave nectar in place of sugar for a raw diet. |
