Fresh Tomato Sauce
Time: 2 to 3 minutes
Speed: Variable to High
| 6 (370 g) medium Italian plum tomatoes |
| 1 (70 g) small onion |
| 1 (50 g) small carrot |
| 2 tablespoons tomato paste |
| 1 clove garlic |
| 1/2 teaspoon basil |
| 1/2 teaspoon oregano |
| 1/2 teaspoon fresh lemon juice |
| 1/2 teaspoon brown sugar |
| 1/4 teaspoon salt |

| Place all ingredients in Vita-Mix container in order listed. Secure two-part lid.. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run machine for 2 to 3 minutes. If necessary, use the tamper to press any ingredients into blades while processing. Pour into saucepan. Simmer for 35 to 40 minutes. |
