Tomato "Pizza" Fondue

| Sun Dried Tomatoes |
| 2 ounces sun dried tomatoes |
| 1 cup (240 mL) hot water |
| |
| Steep sun dried tomatoes in 1 cup hot water for 30 minutes. Drain, save liquid for next step. Chop sun dried tomato pieces and reserve.

| 14 oz. can of chopped tomatoes with liquid |
| sun dried tomato liquid made in step 1 |
| 3/4 cup (180 ml) water |
| 2 teaspoons lemon juice |
| 2 cloves garlic minced |
| 1 tablespoon tomato paste |
| 1 teaspoon dry oregano |
| 1 teaspoon dry basil |
| 1 tablespoon corn starch |
| 1/2 teaspoon red pepper flakes |
| 12 oz. part skim mozzarella, cubed |
| 6 ounces provolone cheese, cubed |
| 3 ounces grated Parmesan |

| Place all ingredients into the Vita-Mix container in the order listed, except chopped sun dried tomatoes. Secure 2-part lid. Select VARIABLE speed #1. Turn machine on and quickly increase speed to #10; then to HIGH. Allow machine to run for 3-4 minutes, until mixture is smooth and warm. Pour mixture into fondue pot. Stir in the reserved sun dried tomato pieces.
