Smoked Cheddar Cheese Sauce

| 2 1/2 cups (600 mL) skim milk |
| 6 ounces smoked or plain cheddar cheese |
| 6 ounces non-fat cream cheese |
| 1 tablespoon cornstarch |
| 1 teaspoon salt |
| 1 teaspoon sweet paprika |
| freshly ground black pepper, to taste |

| Place all ingredients into the Vita-Mix container in the order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn machine on and quickly increase speed to #10; then to HIGH. Run for 4 to 5 minutes. |
