Peach Ice Cream
Yield: 3 cups (720 mL)
Processsing Time: 30 - 60 seconds
Speed: Variable to High
| 1 cup (240 mL) skim, 1%, or 2% milk |
| 1 pound (450 g) frozen peaches |
| 1/2 cup sugar or other sweetener, to taste |
| 1/2 teaspoon vanilla flavoring |
| 1/2 teaspoon almond flavoring |

Place all ingredients in the Vita-Mix container in the order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn machine on and quickly increase speed to #10; then to HIGH. Insert the tamper through the lid to press frozen peaches into the blades while the machine is processing. A loud pulling sound will indicate that the mixture is frozen and should form four mounds (about 30 to 60 seconds). Watch your mixture carefully, running the machine longer does not make it more frozen – it causes melting. |

| Note: If mixture has the consistency of a milkshake, firm it up by quickly adding another cup of frozen cubes. Process until smooth . |
