Orange Nut Oatmeal Cookies

| Preparation: |
| Preheat oven to 375º. Spray cookie sheet with cooking spray. |
| |
| Instructions: |
| 1 navel orange, peeled and quartered |
| 1 egg |
| 1/2 cup (120 mL) vegetable oil |
| 1 tablespoon molasses |
| 1 teaspoon vanilla |
| 1 cup brown sugar |
| |
| Place above ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run machine for 20 seconds or until well blended. |

| 1 teaspoon baking soda |
| 1 teaspoon salt |
| 1/2 teaspoon cinnamon |
| 1/4 teaspoon ground cloves |
| 1/2 cup walnuts (optional) |
| 1 1/2 cups all-purpose flour |
| 1 1/2 cups rolled oats |
| |
| Remove lid and add above ingredients. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #5. Remove lid plug and insert tamper. Run machine for 15 seconds. Press ingredients into the blades until just moistened. |

| Bake |
Drop by teaspoonfuls onto prepared cookie sheet. Bake 8 to 10 minutes or until lightly browned.
