1/4 cup fresh cilantro
1/2 medium onion
1 teaspoon fresh lemon juice
6 ripe roma tomatoes, quartered
1 serrano chile pepper
1 teaspoon salt (optional)
 
Place all ingredients into the Vita-Mix container in order listed and secure lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #3. Blend for 3-5 seconds or until ingredients are chopped to desired consistency. If necessary, use the tamper to push the ingredients into the blades while proessing. Do not over mix. Serve with tortilla chips.
