Orange Nut Oatmeal Cookies

Ingredients

Preparation:
Preheat oven to 375º. Spray cookie sheet with cooking spray.
 
Instructions:
1 navel orange, peeled and quartered
1 egg
1/2 cup (120 mL) vegetable oil
1 tablespoon molasses
1 teaspoon vanilla
1 cup brown sugar
 
Place above ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run machine for 20 seconds or until well blended.
 
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 cup walnuts (optional)
1 1/2 cups all-purpose flour
1 1/2 cups rolled oats
 
Remove lid and add above ingredients. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #5. Remove lid plug and insert tamper. Run machine for 15 seconds. Press ingredients into the blades until just moistened.
 
Bake
Drop by teaspoonfuls onto prepared cookie sheet. Bake 8 to 10 minutes or until lightly browned.

 
Variation:
Stir 1/2 cup (120 mL) chocolate chips or raisins into finished batter.
