A multi-purpose sauce that can be used as a salad dressing or marinade.
Ingredients
| 1/4 cup (60 ml) white wine vinegar |
| 1 orange, peeled, halved |
| 1 lemon, peeled, halved, seeded |
| 1 lime, peeled, halved |
| 1 scallion, halved |
| 1 teaspoon whole grain mustard |
| 1/2-inch x 1/2-inch piece (13 cm x 13 cm) fresh ginger or 1 teaspoon ginger paste |
| 1 teaspoon salt |
| 1/4 cup (60 ml) olive oil |
| 1/2 cup (120 ml) peanut oil |
| 2 teaspoons sesame oil |
| 1 tablespoon honey |
| 1/4 cup (15 g) fresh parsley leaves |
| 1 teaspoon fresh cilantro |
| 1. Place first eight ingredients into the Vitamix container in the order listed and secure lid.
2. Select Variable 1. 3. Turn machine on and quickly increase speed to Variable 10, then High. 4. Blend for 30 seconds. 5. Remove the lid plug and slowly add oils in a thin stream through the lid plug opening until emulsified. 6. Reduce speed to Variable 4 and add parsley and cilantro. 7. Blend for 1 minute until smooth. |
