Fresh Tomato Sauce

Yield: 2 cups (480 mL)

Ingredients

6 (370 g) medium Italian plum tomatoes
1 (70 g) small onion
1 (50 g) small carrot
2 tablespoons tomato paste
1 clove garlic
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon fresh lemon juice
1/2 teaspoon brown sugar
1/4 teaspoon salt
 
Place all ingredients in Vita-Mix container in order listed. Secure two-part lid.. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run machine for 2 to 3 minutes. If necessary, use the tamper to press any ingredients into blades while processing. Pour into saucepan. Simmer for 35 to 40 minutes.
 
Note: Serve over pasta.
