Ingredients

Prepare
1 clove garlic
1 thick slice onion
4 mushrooms
1 thick slice green pepper
8 slices turkey pepperoni
1/2 teaspoon extra virgin olive oil
1 1/2 oz. Italian sausage - cooked & drained (broken into small pieces)
 
Chop the above ingredients, and place them into a microwave safe bowl. Cook on high for 2 minutes. Add to cooked ingredients. Set aside.
 
Mix
2 1/2 cups (600 mL) boiling water
3 large roma tomatoes
5 tablespoons tomato paste
1 teaspoon oregano
1 teaspoon basil
1/4 teaspoon black pepper
3/4 teaspoon salt
1 tablespoon parmesan cheese
 
Place above ingredients in Vita-Mix container. Secure the lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then HIGH. Run for 1 to 3 minutes or until steam escapes through lid. Reduce speed to VARIABLE speed #3 and remove lid plug. Add cooked ingredients along with 1/4 cup mozzarella cheese to the soup and blend for an additional 5 to 10 seconds.

Tomatoes May Help Reduce Cancer Risk

The Journal of the National Cancer Institute published the results of a study conducted by Harvard University researchers in December 1995 which showed an association between consuming a diet rich in tomato-based foods and a decreased risk of prostate cancer.

The researchers analyzed the eating habits of over 47,000 men between the ages of 40-75 for six years.

They found that the consumption of tomatoes, tomato sauce, tomato juice and pizza was associated with a reduced risk for developing prostate cancer.

Researchers suspect that lycopene, an antioxidant nutrient found in tomatoes, may be responsible for this possible protective effect.

What are Lycopenes?

Lycopenes are part of the carotenoid family of pigments that create the color in certain fruits and vegetables.

And like essential amino acids, they are not manufactured in the body. Research shows that lycopenes are the most powerful antioxidant in the carotenoid family.

Antioxidants, which include vitamin C and E, are important in protecting the body from free radicals which degrade many parts of the body.
