Tomato "Pizza" Fondue
 
Yield: 4 1/2 cups (880 mL) (4-6 servings)
 
Sun Dried Tomatoes
2 ounces sun dried tomatoes
1 cup (240 mL) hot water
 
Steep sun dried tomatoes in 1 cup hot water for 30 minutes. Drain, save liquid for next step. Chop sun dried tomato pieces and reserve.

3/4 cup (180 ml) water
2 teaspoons lemon juice
2 cloves garlic minced
1 tablespoon tomato paste
1 teaspoon dry oregano
1 teaspoon dry basil
1 tablespoon corn starch
1/2 teaspoon red pepper flakes
12 oz. part skim mozzarella, cubed
6 ounces provolone cheese, cubed
3 ounces grated Parmesan

Place all ingredients into the Vita-Mix container in the order listed, except chopped sun dried tomatoes. Secure 2-part lid. Select VARIABLE speed #1. Turn machine on and quickly increase speed to #10; then to HIGH. Allow machine to run for 3-4 minutes, until mixture is smooth and warm. Pour mixture into fondue pot. Stir in the reserved sun dried tomato pieces.
