Broccoli Cheese Soup
 
Yield: 2 cups (480 mL)
 
1 cup (240 mL) skim or lowfat milk, steaming
1/3 cup lowfat Cheddar cheese
1 cup broccoli or cauliflower, steamed
1/4 cup onion
1 teaspoon cornstarch
1/4 teaspoon chicken or vegetable bouillon or soup base

Place all ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 5 to 6 minutes or until smooth. Serve immediately.
 
Note: Serve over steamed broccoli pieces. (optional)
