1/4 cup fresh cilantro
1/2 medium (55 g) onion
1 teaspoon fresh lemon juice
6 (372 g) ripe roma tomatoes, quartered
1 (45 g) serrano chile pepper
1 teaspoon salt (optional)

Place all ingredients in Vita-Mix container in order listed. Secure two-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #3. Run for 3-5 seconds or until ingredients are chopped to desired consistency. If necessary, use the tamper to push the ingredients into the blades while proessing. Do not over mix. Serve with tortilla chips.
