Whole Wheat Yogurt Pancakes
 
Yield: 6 pancakes
 
Mix
1 cup whole wheat flour
1 teaspoon baking soda
3/4 cup (180 mL) plain yogurt
1 1/4 cups (300 mL) water
1/2 cup oats
1 cup (240 mL) blueberries or other fruits

Place flour and baking soda in Vita-Mix container. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 10 seconds until mixed. Reduce speed to #4 and run for 5 seconds to form a hole in the center of the flour mixture. Stop and add the yogurt and water. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #6. Run machine for 15 seconds or until just mixed. If necessary, stop and use a spatula to loosen any flour from the corners of the container. Reduce speed to #4 and add oats. Run for 5 seconds or until just mixed but not well blended. Batter should be fairly thick. If too thin, stir in more oats. Stir in fruit.

Fry in your Neova 10" (25 cm) gourmet skillet or other non-stick coated pan until browned on each side.
Tilt pan to distribute batter evenly.
