1. Place all ingredients, except olive oil, into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn on machine and quickly increase speed to Variable 10, then to High.
4. Blend for 30 seconds or until smooth.
5. Reduce speed to Variable 4 and remove lid plug.
6. Pour oil in a thin stream through the lid plug opening until thoroughly emulsified.
Note: Refrigerate in airtight container. Bring to room temperature and shake before serving over salad.Use agave nectar in place of sugar for a raw diet.
