Carol's Awesome Vegetable Soup

Step 1

1 fresh carrot

1 stalk fresh celery

3 florettes fresh broccoli

Place carrot, celery and broccoli in machine. Select VARIABLE speed #4 or #5; turn on machine for 10 seconds or until chopped.

Step 2

1 box frozen spinach

1 14oz. can, diced tomatoes

1/2 medium cucumber

1 cube vegetable boullion

1 cup hot water

1 tablespoon fresh garlic

5-6 thin slices fresh ginger

1/4 teaspoon sage

1/4 teaspoon cumin

1/4 teaspoon basil

Tabasco sauce to taste

Place remaining ingredients into the Vita-Mix container. Secure lid. Select VARIABLE speed #1 and quickly increase speed to #10; then to HIGH. Run machine for 3 to 4 minutes or until smooth and hot.
