Pineapple Upside-Down Cheesecake
 
Yield: 10 servings
 
2 tablespoons (26 g) heart healthy butter spread
1/4-1/2 cup (55-110 g) brown sugar
15-ounce (420g) can pineapple slices
10 maraschino cherries
3/4 cup (180 ml) egg substitute or 3 eggs
2/3 cup (160 ml) water
1/4-1/2 cup (52-104 g) heart healthy butter spread
1 box cake mix, yellow or pineapple

1. Preheat oven to 350 F (180 C).
2. Melt butter spread in a 9x13-inch (23 cm x 323 cm) cake pan. Sprinkle brown sugar over melted margarine. Arrange drained pineapple slices and cherries to cover bottom of pan.
3. Place eggs, water and butter spread into the Vitamix container and secure lid.
4. Select Variable 1.
5. Turn machine on and quickly increase speed to Variable 4.
6. Blend for 10-15 seconds and remove the lid plug.
7. Add cake mix through the lid plug opening. Continuing blending until mixed. Pour over pineapple.
 
Cheese Topping
1/2 cup (120 ml) egg substitute or 2 eggs
15-ounce (420g) carton skim ricotta cheese
1/4 cup (50 g) sugar or other sweetener, to taste

8. Place cheese, sugar and eggs into the Vitamix container and secure lid.
9. Select Variable 1.
10. Turn machine on and quickly increase speed to Variable 4.
11. Blend for 10-15 seconds. Spread mixture gently over top of cake batter. Do not blend the two layers.
12. Bake for 45-50 minutes. Cool slightly. Invert pan over a rectangular tray.
