1 Citrus Carrot Cocktail   Yield: 2 cups (480 mL)   1 cup (240 mL) pineapple with juice 1/2 cup carrots 1/8-inch (3 mm) slice lemon, with peel 1 cup (240 mL) ice cubes   Place all ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 1 minute or until smooth. Serve immediately.
