Zesty Corn Muffins
 
Yield: 12 muffins
 
3/4 cup (94 g) all purpose flour
1/4 cup (25 g) soy flour
1 cup (138 g) yellow cornmeal
2 tablespoons (25 g) sugar
4 teaspoons baking powder
1 teaspoon salt
1 cup (240 ml) buttermilk
1/4 cup (60 ml) olive oil
2 eggs, slightly beaten
1/2 cup (56 g) shredded cheddar cheese
1/4 cup (34 g) chopped green chilies

1. Preheat oven to 425F (220C). Spray muffin pans with non-stick spray or line with paper baking cups.
2. Place the flours, cornmeal, sugar, baking powder and salt into the Vitamix container and secure lid.
3. Select Variable 1.
4. Turn machine on and quickly increase speed to Variable 5.
5. Blend for 10 seconds or until well mixed. Remove lid plug. Add buttermilk, oil and eggs through the lid plug opening. Replace lid plug.
6. Blend 20 seconds or until smooth. If necessary, use the tamper to press any ingredients into the blades while processing.
7. Gently stir in cheese and green chilies. Pour into paper baking cups.
8. Bake for 22-25 minutes.
