Aioli
 
Yield: 2 cups (480 mL)
 
3 large pasteurized egg yolks
1/4 cup (60 mL) lemon juice
1 teaspoon salt
1/8 teaspoon white pepper
3 large garlic cloves
1 cup (240 mL) light olive oil
 
Place egg yolks, lemon juice, salt and pepper in Vita-Mix container. Secure 2-part lid. Select VARIABLE speed #1. Turn machine on and quickly increase speed to #8. Remove lid plug and drop in garlic cloves. Run for 10 seconds then reduce speed to #6. With the machine running, slowly pour in the oil in a steady thin, stream until emulsified. Serve or store in refrigerator until needed.
 
Note: Refrigerate in airtight container.
