Smoked Cheddar Cheese Sauce
 
Yield: 4 1/2 cups (1.1 L)
 
2 1/2 cups (600 mL) skim milk
6 ounces smoked or plain cheddar cheese
6 ounces non-fat cream cheese
1 tablespoon cornstarch
1 teaspoon salt
1 teaspoon sweet paprika
freshly ground black pepper, to taste
 
Place all ingredients into the Vita-Mix container in the order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn machine on and quickly increase speed to #10; then to HIGH. Run for 4 to 5 minutes.
 
Recommended for: Pasta of your choice.
